Glavatec presents at the Bakery Branch Day 2025

The Association of German Industrial Bakeries had planned a total of 6 presentations on a wide range of topics for the Bakery Branch Day 2025 and had also scheduled Glavatec for this.
 
Glavatec had the opportunity to explain the basics and advantages of Glavatec vacuum cooling to around 40 participants - bakeries, suppliers and experts:
 
Florian Bäbler (Dipl.-Ing. Mechatronics BSc) first explained the physical basics of vacuum cooling in a very clear and understandable way for everyone. Daniel Chwalzcyk (Dipl.-Ing. Food Technology BSc and trained master baker) then gave the participants an insight into the food technology processes and the advantages of vacuum cooling in terms of product quality (shelf life, appearance, consistency and taste) and process efficiency (time savings, energy savings).
 
The participants showed lively interest, and the numerous detailed questions and conclusive answers shed further light on the topic. We were very pleased with the consistently positive feedback and it confirmed our approach.
 
Thanks to the management of the association for this very successful event, from which all participants were able to take away many new insights.

VakuumDay 2024 with a visit to a system in productive operation

  • Location: Jacques Gabriel AG Bakery, Spielhof 15, 8750 Glarus

  • Content: Specific and directly applicable know-how from experienced industry experts

 

The VacuumDay expert seminar was a perfect mix of exciting presentations, live production sequences, sinpiring discussions and the tasting of vacuum-cooled product samples.

Everything centred around the rapid cooling of baked goods and foodstuffs in a vacuum chamber and the associated decisive advantages for operations, production processes and product quality. The operation, financing and procurement of the system were also explained at first hand. A tour of the plant, a tasting of impressive sample products and an intensive dialogue between experts rounded off the successful event.

We would like to thank Jacques Gabriel AG, CF-Enterprises GmbH, the employees of Glavatec and all participants for this thoroughly successful event. We are already looking forward to the continuation of this successful VacuumDay seminar series next year.

VakuumDay

 

In cooperation with IGV-GmbH and the Vereinigung der Backbranche e.V. (Berlin/Brandenburg regional group), we organize an annual specialist seminar on the latest developments and experiences from research and industry on vacuum cooling technology, which is prominently reported on in the magazine «Backtechnik Europe», for example. The specialist seminar has also successfully established itself as an exchange platform for vacuum cooling users. Glavatec also supervises and supports bachelor's and master's theses on the subject of vacuum cooling.
