Verband Deutscher Großbäckereien e.V. has been the trade association for branch and delivery wholesale bakeries for more than 100 years. Its members from Germany and Austria guarantee the variety of bread and baked goods on offer for consumers. In Germany, branch and delivery bakeries represent by far the largest share of the sector's turnover of more than 22 billion euros.

Vacuum cooling in baking: lower costs, higher quality

The Swiss company Glavatec AG has redefined the use of vacuum cooling in baking operations: Appreciated in continuous use due to substantial energy savings and quality improvements as well as the optimization of production processes, adapted to the individual conditions in the respective company and scalable as required.

Dipl. Ing. Mechatronics FH Florian Bäbler, CTO Glavatec AG, and/or M.A./MLaw Flavia Bäbler, CEO Glavatec AG, will present the basic features and the technological principle of the multi-patented Glavatec vacuum cooling system.

Dipl. Ing. Food Technology FH Daniel Chwalczyk, Glavatec AG, will present numerous practical application examples and show you the technological and organizational integration of vacuum cooling in the baking and cooling process, the effects on cooling logistics, the possible increases in efficiency in production and the resulting energy savings.

The VacuumDay expert seminar was a perfect mix of exciting presentations, live production sequences, sinpiring discussions and the tasting of vacuum-cooled product samples.

Everything centred around the rapid cooling of baked goods and foodstuffs in a vacuum chamber and the associated decisive advantages for operations, production processes and product quality. The operation, financing and procurement of the system were also explained at first hand. A tour of the plant, a tasting of impressive sample products and an intensive dialogue between experts rounded off the successful event.

We would like to thank Jacques Gabriel AG, CF-Enterprises GmbH, the employees of Glavatec and all participants for this thoroughly successful event. We are already looking forward to the continuation of this successful VacuumDay seminar series next year.

VakuumDay

 

In cooperation with IGV-GmbH and the Vereinigung der Backbranche e.V. (Berlin/Brandenburg regional group), we organize an annual specialist seminar on the latest developments and experiences from research and industry on vacuum cooling technology, which is prominently reported on in the magazine «Backtechnik Europe», for example. The specialist seminar has also successfully established itself as an exchange platform for vacuum cooling users. Glavatec also supervises and supports bachelor's and master's theses on the subject of vacuum cooling.
